Marinated greek potatoes

Is there any food more versatile than a potato? These greek potatoes have a hint a lemon and are marinated in bone broth to really ramp up the flavor. They're a favorite side dish in our house - sometimes they barely make them onto a plate, going straight from the pan and into bellies!


2.5 pounds potatoes; 1.5 cups bison bone broth or vegan broth); 1/2 cup olive oil; 1/3 cup lemon juice; 5 minced garlic cloves; 1 tbsp seasoning of choice (we used the garlic pepper from @spiceworldwpg); 2 tsp salt.

To make:

Preheat oven to 390 degrees F; peel potatoes and cut into wedges; combine all ingredients and toss well (optional: marinate for 30 - 60 mins); place in a pan and roast 20 mins; turn potatoes and roast another 25 - 30 mins. Optional to make crispier: remove potatoes and place in another pan. Drizzle some of the liquid on them. Roast for another 25 mins.
